Ingredients
1 package ground turkey
½ Tbsp olive oil
1 onion, diced
3 garlic cloves, minced
4 medium sized carrots, sliced
2 cans petite diced tomatoes
12-14 cups low sodium chicken broth
¾ head of cabbage, cut into strips
Seasonings
1 tsp salt 1 tsp oregano
1 ¼ tsp paprika ¾ tsp thyme
1 large bay leaf 2 tsp brown sugar 1 Tbsp Worcestershire sauce
Directions
1. In a medium skillet, cook the turkey in a cup of chicken broth until cooked through.
2. In a large pot, combine olive oil, onion, garlic, and carrots; sauté until onions are translucent. Add diced tomatoes, chicken broth (reserve 1 cup), and the seasonings. Cover and simmer for an hour.
3. In a medium pot, combine cabbage and the reserved cup of chicken broth, and steam until tender. Add to the soup.
Serve with cheese, crackers and cheddar biscuits.
