Ingredients
2 cups chicken breast cooked and chopped.
1 can black beans
1 cup brown rice
½ red bell pepper
½ onion
2 tsp olive oil.
Spices
½ tsp garlic powder ¼ tsp onion powder 1 tsp cumin 1 tsp smoked paprika ¾ tsp salt
Topping
1 cup cheddar cheese
1 to 1 ½ cups crushed cheese crackers
Directions
Preheat oven or toaster oven to 375F
Cook rice according to instructions, adding 1 tsp of olive oil. Sauté pepper and onion in a skillet with the remaining tsp of olive oil. Reserve smoked paprika and topping ingredients; mix the rest of the ingredients together in a casserole dish. Sprinkle paprika, cheese, and crushed cheese crackers, respectively on top.
Bake at least 20 minutes or until cheese is bubbly and crackers are slightly browned on top.
Notes
If cooking in a toaster oven, reduce temp to 350F.
If using rotisserie chicken, reduce salt to ¼ tsp.
Use Cheez-it duoz (bacon and cheddar) for an extra flavor punch.
