Ingredients
2 tsp. olive oil
2 garlic cloves
1 medium onion
1 red bell pepper
8 cups low sodium chicken broth
1 can black beans, drained
1 can diced tomatoes
3 cups chicken, diced
3/4 block cream cheese
Green onion, for garnish
Spices:
1 Tbsp. Chili powder 1/2 tsp. cumin 1/2 tsp. oregano
1/2 tsp. onion powder 1 tsp. salt
Directions
1. In medium pot, sauté onion and pepper in olive oil.
2. Add chicken broth, black beans, tomatoes, chicken, and spices.
3. Simmer for at least 30 minutes; add cream cheese and simmer until cream cheese is melted.
Serve with avocado and tortilla chips.
Notes:
Simmering is necessary to infuse the chicken and vegetables with the spices
If using rotisserie chicken, leave out the salt.
If using regular chicken broth, leave out the salt.
